Urbanites are increasingly removed from the complex of factors that provide us food. Being concerned about sustainability, we need to understand the complex webs in food systems and their implications for the health and natural systems. This problem-based course will wrestle with urban food systems organized to address the 3 Es of sustainability: environmental, economic, and equity.
